Recipes differ by household \u2014 more aubergine, more carrot, more chilli \u2014 and everyone insists their version is the correct one.<\/p>\n<p>It is often confused with Serbian and Macedonian ajvar, but there is a clear difference: lyutenitsa contains tomato, ajvar does not. The salad takes its name from the Shopi of the Sofia region, but in its present form it was popularised during the socialist era by the state tourism organisation as a dish to serve to foreign visitors \u2014 white cheese, red tomato and green pepper matching the colours of the national flag.<\/p>\n<p>Everything rests on the ingredients, since there is nowhere to hide: ripe summer tomatoes, real brined white cheese grated over the top, salt, vinegar and sunflower oil. It is autumn food in the most literal sense \u2014 pumpkins are harvested in October and used through the winter.<\/p>\n<p>Its fixed place is the Christmas Eve table, which in Bulgarian tradition is meatless and contains an odd number of dishes. Grated potatoes and onion are seasoned heavily with Rhodope savory \u2014 the herb locals call merudiya \u2014 and baked into a flat cake, traditionally in a covered pan set among the embers.<\/p>\n<p>The result is crisp outside and soft inside, and it is served with yoghurt, white cheese or nothing at all. Several kinds of meat \u2014 pork, chicken, sometimes sausage and game \u2014 are layered with rice and sauerkraut leaves in a clay pot, which is then sealed and left in a low oven for hours. The name comes from the covering, and the sealing is the point: nothing escapes.<\/p>\n<p>Bansko treats it as a local emblem and gives it its own celebration in winter, which is when the dish makes most sense anyway. In winter the wrapping is sauerkraut leaf, which is sharper and much more robust \u2014 these are the ones that appear at Christmas and New Year.<\/p>\n<p>The Christmas Eve version is meatless, filled with rice, onion and dried herbs, and served without yoghurt on the fasting table. Rolling them takes real patience, which is why they are usually made in large batches by more than one pair of hands.<\/p>\n<h3>#2 \u2014 Kavarma <a href=\"https:\/\/www.youtube.com\/watch?v=5fbVcelXhPw&amp;t=212s\">\u25b6 3:32<\/a><\/h3>\n<p><strong>\ud83d\udccd<\/strong> nationwide \u00b7 <strong>\ud83c\udf7d<\/strong> main dish, autumn and winter \u00b7 <strong>\ud83e\udd58<\/strong> meat, onions, peppers, baked in a clay pot<\/p>\n<p>Kavarma is meat, onion and pepper cooked down slowly in its own juices, usually finished in individual earthenware pots and brought to the table still bubbling. The clay is not decoration \u2014 it holds heat and lets the dish keep cooking after it leaves the oven.<\/p>\n<p>The name comes from the Turkish kavurma, a reminder of how much of the Balkan kitchen is shared. Grape is the most common base, plum the other classic, and apricot, pear and quince all have their followers.<\/p>\n<p>Home distilling remains a genuine tradition rather than folklore. Every autumn, licensed village stills work through the fruit that families bring in, and the results are compared with complete seriousness for the rest of the year.
